Coconut Macaroons

Who can resist a Coconut Macaroon?? Obviously my family can't! We ate the whole batch in ONE evening! Well, there was one left in the morning and Mark didn't take it to work - he left it for ME! I think that means he loves me! Ha ha.

My mother gave me this recipe, who actually got it from her best friend Martha Stewart. These macaroons are a REALLY "good thing". I was dissapointed because I didn't line the baking pan and they stuck to the pan. How sad. Maybe if I had been a little more patient and waited until they were completely cooled, I think they would not have stuck. Oh well. They're all the same in my stomach and Mark was more than happy to eat the broken ones!

Coconut Macaroons

3/4 c sugar

2 1/2 c unsweetened coconut

2 egg whites

1 tsp vanilla

pinch of salt

Combine ingredients. Line baking pan. Dampen hands. Drop by spoonfuls. Bake 16-17 min @ 325.

Note: If using sweetened coconut, decrease sugar to 1/4 c. It worked for me!

My Mother's Secret to Success

So I've been inspired by a couple of my friends to continue to update my blog. I'm excited to finally get with the program and JUST DO IT!
Recently my mom told me her secret to success as a young mother trying to balance a family and a home. She would dedicate one day to laundry, one to cleaning, one to gardening, etc. This was fabulous as I'm borderline ADD and all I have to do is focus on one thing each day, then I know I've accomplished something (that you can see). Last week I was quite successful in this endeavor and cleaned my house, did 3 loads of laundry and then weeded my entire garden on the hottest day of the week - with 40 SPF sunscreen on. Today was baking day. I wanted to make cookies and macaroons, but I only had 4 eggs and after I made cookies I was trying to split some eggs and broke the yolk, so I wasn't as successful as I hoped to be. Oh well! Check out the fruit of my labour (Pumkin Oatmeal Cookies).

Tomorrow's project - painting!
